Ingredients
For the savaren
- 1000g Briozito Magnus Bochen (Mix for brioche)
- 200g Margarine Premium Imperial soft (room temperature)
- 425g of water
- 60g of fresh yeast
- 15 eggs For the syrup
- 1000g Water
- 750g Sugar
- 50-100g Cognac or rum (depending on how strong taste we want to give)
Directions
Beat all the ingredients in the mixer for 2 minutes at slow speed, without the eggs, add the eggs one by one to the fast speed until the dough binds well. The temperature of the dough should be at 26-27 ° C. Rest the dough, covered, for 10 minutes. Place our dough in formulas of your choice and put it in the mouth for 25-30 minutes until it doubles somewhere in volume. Bake in a preheated oven at 170 ° C -180 ° C for about 30-40 minutes (depending on your oven and the weight of the preparations).
Once they are taken out of the oven, let them cool and dry thoroughly and then immerse them in the syrup that we have prepared that is hot and let them take a good syrup. From time to time, we strengthen the fire to keep the syrup hot. Finally we will need a strawberry jam to cover the dads. Boil it in a saucepan with some water and cover the dads with a brush.
Mounting
After we have baked, syrup and coated with jam, our dads, let them cool in the refrigerator for about 1 hour. Then we cut and fill with whipped cream and decorate with strawberries
