- 50g Yeast
- 1300g Water (depending on the absorption of flour)
For the decoration
- 250g Sesame
- 60gr Black Sesame
Directions
Kneading time: 2' at slow speed and 12'-14' at high speed.
Yeast Temperature: 26 οC
Rest time: 12 hours in the refrigerator at 5 οC, in a special lid.
Cut-Weighing: 1000g each.
Dough Forming: Quadruple shaped in form, sesame paste with black sesame.
Spraying time: 30' at 35 °C and 75% humidity.
Baking Time: 40'-50' with plenty of steam.
Oven temperature: 240 °C and after 10'-15' continue at 220 °C with a closed tap.
