Ingredients

For the dough

  • 1000g Bread wheat flour strong 70% 
  • 500g SmakoVit Uldo (blend of rye bread with potato flakes)
  • 40g Yeast
  • 60g Sunflower Oil FAMA Sunshine 
  • 1100g Water

 

For the decor

  • Yellow rustic flour

Directions

Knead all ingredients together for 3' at slow speed and 5'-6' at high speed, depending on the kneader.

  • Yeast temperature: 26 οC
  • Dough time: 30’
  • Cut - Weigh: 580g-600g mould and roll in yellow flour
  • Stove Time: 40' at 35 °C and 75% Humidity
  • Baking time : 45'

Oven temperature: Bake at 240 °C for 10'-15' and then at 210 °C till the end of baking time. In the last 10 minutes we open tamper.
