Chocolate fusion
Ingredients
- 75g egg yolks
- 150g dairy cream Lowicz 36%
- 10g gelatin sheet
- 460g compound chocolate Nera Special 32% fat (melted)
- 710g semi-whipped dairy cream Lowicz 36%
For the biscuit pieces:
- 500g Crema Classic with biscuits praline
- 180g compound chocolate Nera Special 32% fat (melted)
Directions
Let the gelatin sheets soak in ice-cold water. Put the egg yolks in a basin and beat them until fluffy. Heat the 150g dairy cream Lowicz 36% in a small pot and put in the gelatin sheets to melt. Then, slowly pour the mixture into the egg yolks, while beating until combined. Add the mixture and the melt compound chocolate Nera special 32% fat to the mixer bowl and mix with the whisk until the mixture reaches room temperature. Finally, add the semi-whipped dairy cream Lowicz 36% and combine it to the mixture. For the biscuit pieces: Heat the compound chocolate Nera Special 32% fat until it melts, add the Crema Classic with biscuits praline and combine the two ingredients. Spread the mix on a baking sheet and when it cools off cut it in pieces and add it to the mousse.
