Gregal Quattro Mousse (Top Chef)
Ingredients
For the cake
- 1000g Vanilla Dream Cake (Mix for Vanilla Cream Cake)
- 350g of whole eggs
- 300g of FAMA Fritto oil
- 225g of water
For Mousses (Chocolate, Mocha, Strawberry, Vanilla)
- 1000g mix for Top Chef mousse
- 2250g of 3.5% fat milk
Directions
For the cake Put all the ingredients in the mixer bin and knock them with the feather for 1 minute at the slow speed until the dough is homogenized. Clean the bucket walls with a spatula and knock at medium speed for 4-5 minutes. Place the dough in turkeys and bake in a preheated oven at 160 - 170oC for about 35-45 minutes (depending on your oven). For Mousses (Chocolate, Mocha, Strawberry, Vanilla) Place the mix for mousse and milk (cold) in the mixer bin, we hit them for about 4 minutes at fast speed until it clicks.
Mounting
Cut Vanilla Dream Cake horizontally into slices and fill with mousse by placing a slice of cake with a layer of mousse. Finally, freeze and overcoat with Gregal Chocolate (Chocolate paste coating)
