• 75g Yeast

• 100g Margarine FAMA Soft G

• 50g Light Malt Extract ULDO (Barley Malt Extract for light-colored breads in liquid form)

• 1650g Water

 

DECORATIVE INGREDIENTS

 

• 200g sesame seeds

Directions

Kneading Time: 6 'at slow speed and 12'-14' at fast speed.

Dough temperature: 22 °C - 24 °C.

Rest time: 30 '

Dough Pieces: 700-800g.

Dough Formation: Slightly elongated, we pass through water and sesame seeds and in special toasted tops with lid.

Padding time: 40'-45 'at 35 °C and 75% humidity.

Baking time: 50'-60' with steam.

Dough temperature: Bake first at 240 °C and after 10 'continue at 190 °C - 200 °C

Combine with egg - Solomon - Avocado - Rokas leaves.
