• 40g Yeast

• 30g Salt

• 40g Sunflower Sunshine FAMA

• 1300g Water (20-22οC)

 

Directions

Kneading time: 5 'at slow speed and 10' at fast speed.

Dough temperature: 24-26 οC.

Rest time: 40' covered the dough with a cotton cloth.

Stove rest time: 50 'at 35 ° C and 75% humidity.

Baking time: 40'-45 'with enough steam.
