DOUGH INGREDIENTS

 

• 750g Flour 70% soft

• 500g Jogging Uldo (The Bread of Champions and Modern Diet)

• 28g Baking Powder FAMA

• 40g Sugar

• 1g Vanilla

• 400g FAMA Fresh (Shortening with 30% butter)

• 200g Premium compound chocolate Zafiro Bitter Eurocao (melted)

• 300g White wine

• 300g Water

 

COVER INGREDIENTS

 

• 150g Dark chocolate Haya 60% Eurocao (melted) or

• 150g Milk chocolate Mara Milk Eurocao (melted) or

• 150g White chocolate White Miravet Eurocao (melted)

 

DECORATION INGREDIENTS

 

• 50g Nibs De Cacao Eurocao (Small pieces from the roasting and milling of cocoa beans) or

• 50g Skagieta White FAMA or

• 50g Skagieta Black FAMA or

• 50g Skagieta Brown FAMA

 

Directions

Knead all the ingredients together in the feeder mixer for 4 'at 1st gear and 4-5' at 2nd speed until it becomes a dough. Cut - weigh each piece of 20g, roll it into a 17cm wick and place it in sheet metal. Bake in an air-fired oven at 160 οC for 15' with a closed flap and 15' with an open flap. When they cool down, we dive into Chocolates Eurocao that we have melted and decorate them with Nibs De Cacao Eurocao or Skagieta FAMA.
