Ingredients

 

  • 1kg high gluten flour
  • 150g oil FAMA CHOICE
  • 300g caster sugar
  • 150g yeast
  • 500g water
  • 150g FAMA tahini cream
  • (Optional 200g leaven)
  • 1kg FAMA tahini cream (for filling)

Directions

Add all ingredients to the dough kneader and knead at low speed for approximately 5 minutes, plus 5-6 minutes at high speed (or until you have non sticky dough). Cover the dough and leave it on the counter to rest for 20 minutes. Split the dough into 2 balls and roll them out in 30X70cm. Spread the FAMA tahini cream on the surface and roll them. Cut in 3-4cm portions and place them on a baking tray with a baking paper. Proof them in 30-35°C for about 30 minutes. Spray them with water and bake in a hot air oven in 160-170°C for about 12-14 minutes.

You can soak the tahini pies with light syrup, or cover them with FAMA tahini cream or sprinkle them with icing sugar.
